Totsy’s, a Beloved Bukidnon Favorite, Now In Davao City

Totsy’s Cakes and Pastries, a beloved Bukidnon favorite from Bagontaas, Bukidnon, founded and opened in 1998 has expanded to a full grown cafe now known as Totsy’s. This 2024 they are ready to take over the hearts of Mindanao starting by opening more stores and one of them is in Davao City.

Totsy’s Davao opened their store this April 27, 2024 and is ready to offer a new gastronomical experience to Davaoeños starting off by introducing an innovative artisan dish, their croissant pizza. Instead of using the typical thin crust pizza dough, they replaced it with croissant dough and achieved a flaky edged crust for the pizza with an airy and puffy base. The croissant pizza is topped with a generous amount of tomato sauce, meat, and block of melted cheese that leaves you stuffed.

Apart from their flagship dish, they also offer the best of Bukidnon coffee, by serving you good concoction called Bukidnon Special made out of espresso, vanilla, with pandan leaves, topped with salted cream foam.

Apart from the food, they have a wide selection of bread, pastries, and viennoiserie (category of French pastry where croissant and similar puff pastry belongs to). They also offer Filipino snack favorites like ensaymada, binangkal, and more.

Totsy’s is one of the restaurants under the MM Hospitality Corporation (MMHC). The first restaurant under MMHC to take over the hearts of Davao is Roadhouse Cafe. All of these restaurants are found if you visit Bukidnon and stay at Double M Hotel.

Review

We visited Totsy’s, Sunday, April 28, 2024 and it was already packed with people despite us dining after lunch time. We had to wait around for a table to be vacant and we ended up dining at their high tables near their glass window.

I was amazed at the number of different selections they offer from bread to pastries. There were cakes and breads I was even unfamiliar with and was my first time seeing. I was told by their service staff that a lot of the unfamiliar bread were the best seller and were breads people flock at their Bukidnon store.

Of their menu, my attention was caught by their croissant pizza. I saw some of the tables being served with it and I was instantaneously sold to the idea of ordering one.

I am amazed by how great their service is. Their service staff were attentive and professional and despite many orders from different tables, they served our dishes on time as expected. They also made us aware that the food serving is big in portion to give us some expectation. They helped us on our inquiries and provided suggestions based on our preferences. A lot of the service crew were stationed to each tables to ensure everything is accommodated. They refill the water every time yours get empty. The service is great but hopefully consistent as time goes by.

Following are what we sampled : an order of meatball and mash, an order of their sausage which is the hungarian and eggs, pastrami and ham croissant pizza, their barista selection – bukidnon special and s’mores latte, and their bestseller – mille-feuille vanilla bourbon.

We started off with their barista selection which are their bukidnon special and s’mores latte. I was not aware that the drinks were prepared cold as I was hoping to get a hot cup. However, it was not really a bother as iced drink was very much welcome considering the sweltering summer heat.

The bukidnon special was a treat. It was intended to be drank in a special manner, stirred using the pandan leaves and straight from the glass. The pandan aroma was wafting but its taste is overpowered by the coffee and you really can’t taste the pandan. The taste of salted cream and coffee is delicious though. The coffee taste is on the citrussy side with a strong bitter burnt aftertaste. An 8/10 for me.

My choice is the S’mores latte which has a nice presentation but was a bit difficult to drink without creating some mess. It was filled through the brim and overflowing with marshmallow cream. The sweet marshmallow cream perfectly dilutes the bitterness of the coffee but enough bitterness to balance when you eat dessert. It’s 9/10, surprisingly higher than what we expected from the bukidnon special.

Their hungarian sausages and eggs had a generous amount of thick sausage, brioche bread, and perfect scrambled eggs. The scrambled eggs were prepared with consistency of a custard. It may not be other people’s preference but achieving this type of scrambled egg consistency is difficult. The sausage had a nice girth to it, flavorful, and savory. The brioche bread, however, was a little underwhelming and a little burnt for my liking. It had a bitter aftertaste. We gave it an average score of 8.5/10.

Next is the meatball and mash which had a good size of meatballs although I expected bigger serving size. Size per meatballs are consistent with a generous amount of mashed potatoes. The presentation is beautiful and it is sitting in perfect amount of sauce that doesn’t make the mouthfeel of the food soggy. The meatballs were not dry but juicy. It was a little crumbly however which I prefer my meatballs firm and intact. Their mashed potatoes were smoothly prepared and soft to the palate. It achieved a creamy consistency and not dry at all. The pomodoro sauce is also great. Sweet, tangy, and savory. Their pomodoro however were on the sweeter side which I hoped would be more tangy and savory. An 8.5/10 for us.

Lastly, before we go to the desserts, we had their croissant pizza. I ordered the pastrami and ham, because who doesn’t like meat. Their croissant pizza is very generous with the meat and the block of cheese. The layer of cheese is very thick and the meat have generous thick slices topped all over. The tomato sauce used was so flavorful as well. I can sense that the tomato sauce used were not store bought. It has a distinct taste to it. It is tangy and balances the saltiness of the cheese. Adding the aragula makes it really delicious as well though they added only three leaves of aragula on top. As to the croissant base, the longer you eat it, the base becomes soggier which is not a texture I am a fan of. Imagine when you dip croissant to a hot coffee, the consistency feels like that the longer you keep the pizza uneaten. The crust edges retain the flakiness of a croissant though which is nice. If it weren’t for the croissant base consistency, it would be a higher score but by preference it would be a 7.5/10.

Finally, we end with the dessert which is one of their bestsellers, Mille-feuille vanilla bourbon. If you are not a fan of cakes, then this is a nice alternative for you. Imagine the cracker consistency of a sans rival, that would be the base of the dessert. I like the bitterness and sweetness of the burnt bourbon. Their vanilla filling is really delicious as well. I love the viscosity of the vanilla filling. It reminds me of the boston creme filling. It’s definitely a 9/10 for us.

Dining at Totsy’s needs to be with a group of friends or family. The food portion is very generous and is a nice way to share the food experience. Their food selection is also different and brings something interesting in the food scene of Davao. The next time I come back, I would definitely try out their breads and pastry as we were too full to go on.
